Local culinary specialties at the market

Our morning Segway City Tour stops at the picturesque local market in Port Moselle Bay. Here is our small selection of local products:

- Deer sausages or "Caldoche de Cerfs".
In New Caledonia, the deer is a pest and comes in all forms: pavé, terrine, sausages and even a raw marinated deer salad with soy sauce (a very refreshing treat).
A deer sausage, much less fatty than the traditional sausages, a good alternative for the aperitif, the picnic in hike or on the beach.

- Achards (of all kinds!)
Lemon, vegetable, bamboo, chouchoutte, or octopus achards... you will have understood that there is something for everyone! Achards can be mixed with your vegetable or rice accompaniments, and give an exotic touch to your dishes! Sold in jam jars, it is an original and authentic gift idea! Beware, some are more or less spicy !...

- The jams
The fruit trees produce in profusion under the Caledonian climate. A real godsend for jam lovers. Of all the possible exotic fruits, the homemade jams that you buy at the market are an original gift idea that will delight the taste buds of your loved ones!
For sweet and salty lovers: guava jelly spread with fresh goat cheese... A treat.

- Marinated fish salad with coconut milk or Tahitian salad
As its name suggests, this is more of a Polynesian specialty, but its refreshing taste and interesting dietary contributions will delight your lunch break.
