Our recipe ideas for snacking

After a little Segway ride in the cold, we like to warm up with a good snack often composed of a hot drink and a delicacy.
We decided to share with you a recipe that our guide Alexia is particularly fond of: the CHAI LATTE 🧋

Do you know it? Here is the recipe:

FOR THE CHAI TEA

50 cl of water
2 tablespoons of black tea
2 cloves
2 cinnamon sticks
1 star anise
10 cardamom pods
1 tsp. ground ginger
1 pinch of grated nutmeg

Put the water in a saucepan with the spices and bring to a boil. Once boiling, remove from heat, cover and let steep for 5 minutes;
Return to heat and bring to a boil again. Remove from heat, add tea and let steep for another 5 minutes. Strain the Chai Tea into a jar and let cool.

FOR THE LATTE

125 ml chai tea
175 ml milk
1 tablespoon maple syrup or more to taste
ground cinnamon to taste

Bring the milk and maple syrup to a simmer. Remove from heat and blend with an immersion blender to froth.
Pour the Chai Tea into a cup and microwave for 30 seconds. Add the hot and frothy milk, sprinkle with a little cinnamon and/or grated nutmeg. Enjoy it hot!


Don't worry, we didn't forget the little treat to accompany our Chai Latte! So, let's get started on making CINNAMON ROLLS! 🍥 Here are the ingredients and recipe:

INGREDIENTS FOR 4 PARTS

  • 200g flour
  • ½ packet of baker's yeast
  • 2,5cl warm water
  • 5cl of milk
  • 25g of butter
  • 15g of brown sugar
  • 1 egg
  • 1 pinch of salt
  • 1 teaspoon of vanilla extract

RECIPE

The brioche dough
Prepare the yeast in the 5 cl of warm water. In the bowl of a mixer or in a salad bowl, mix the ingredients, then knead for 15 min. Cover and let rest for 1 hour until the dough doubles in volume.

Shaping
Butter a round or rectangular mold and flour it.
On your floured work surface, roll out the dough into a rectangular shape. In a bowl, mix the butter, sugar and spices. Spread the mixture over the entire surface.
Roll the dough lengthwise. Cut out ten small rolls, place them in the mold, cover with a cloth and let them rise for 1 hour.

Baking
Preheat the oven to 180°C. Brush the rolls with milk. Put them in the oven and let them cook until they are a bit golden.

The glaze
Mix the powdered sugar with the fresh cream. Pour this mixture over the hot rolls.
